A recipe that every Soviet housewife knew: the legendary Mishka cake

Mishka cake, aka Olympic Bear cake, was loved not only in the Soviet Union – it is still enjoyed today

Mishka cake is a popular and tasty dessert from the Soviet times. The USSR was famous for the eternal shortage of everything and anything, but Soviet housewives managed to cook even “out of nothing”, and as a result of such experiments appeared culinary masterpieces that are still loved today.

Cake “Bear” – recipe from the USSR

Cake “Mishka” as in my childhood – it’s actually a sour cream cake. Sour cream cakes, part of which comes with cocoa, and sour cream.

Ingredients

(calculation for a 21 cm mould, height 6.5 cm)

For the dough:

  • 350 g low-fat sour cream (10-15%);
  • 150 g sugar*;
  • 100 g (0.5 packet) of butter;
  • 5 g baking soda;
  • 30 g cocoa;
  • 560 g flour.

*The amount of sugar can be increased if desired.

For the cream:

  • 1 litre of sour cream;
  • 150 g sugar* + 10 g vanilla sugar.

*The amount of sugar can be taken more.

Preparation:

  1. For the dough you need to mix sour cream and sugar, add butter. Mix everything. Put baking soda (it is not necessary to quench baking soda, because in the recipe there is sour cream – it is acid).
  2. Divide the mass into 2 equal parts, in the first add 310 g of flour, in the second – sift cocoa, add 280 g of flour, and knead the dough. The dough should be elastic and roll out well, so you can add a little more flour if necessary.
  3. From the first and second parts of the dough, roll out 22cm diameter cakes – there should be 3 white and 3 chocolate cakes. Bake in an oven preheated to 180°C, 8-10 minutes. While still hot, trim the pastry to the diameter of the mould (21 cm).
  4. For the cream, mix the sour cream with the sugar and vanilla sugar, allowing the sugar to dissolve.
  5. To assemble the cake: lay out alternately chocolate and white cakes, they should be smeared with cream. Top the finished cake with cream and sprinkle with crumbs from the remaining cakes. Place in the fridge for at least 6 hours.
  6. If desired, you can make a layer of berries or fruit between the cakes.
