Airy as fluff moist Easter: a lazy no-knead recipe

This airy Easter bake takes a long time to prepare, but is simple to make

Easter 2025 is approaching, which Ukrainians do not pass without soft and fragrant pastries. For the holiday it is customary to prepare Easter with glaze on yeast dough. If you have never cooked this dessert, you will love the moist paskha lazy paskha – the recipe is available even to beginners. The airy, slightly moist dough under the sweet glaze will win over all the relatives.

The most delicious wet Easter without kneading

Ingredients:

  • flour – 380 g;
  • dry yeast – 7 g;
  • butter – 100 g;
  • milk – 150 g;
  • eggs – 2 pcs;
  • sugar – 125 g;
  • lemon – 1 pc;
  • sultanas – 150 g;
  • nuts, candied fruits to taste;
  • pinch of salt;
  • pinch of vanillin.

Preparation:

  1. The yeast must be fresh – check the expiry date. Warm the milk to room temperature, mix it with the yeast, a spoonful of sugar and two spoonfuls of flour. Stir the opara until homogeneous and place in a warm place for 10 minutes.
  2. Pour boiling water over the sultanas for 10 minutes. Then dry them with a paper towel and coat them in flour. Also mix the candied fruits with the flour if you plan to add them. Remove the top zest from the lemon with a fine grater.
  3. Melt the butter. Cool until it is just barely warm. Stir in the eggs, sugar, salt and vanillin. Pour in the yeast paste. Stir everything until smooth and add the lemon zest. Then pour in the sifted flour. Stir the dough until it is as thick as sour cream.
  4. Cover the dough with a towel and leave it in a warm place for 2 hours. During this time it should double in size. Stir the sultanas and candied fruit into the dough. Knead with your hands until the filling is evenly distributed.
  5. Fill the baking tins one third full. Cover with a towel and leave to rise again for 1.5 hours, during which time the dough will rise to the centre of the moulds. Bake the Easter without kneading for about 30-35 minutes at 170°. Check the readiness with a toothpick. If the dough is raw inside and the top is browned, cover with foil.
