This snack is a wonderful combination of classic products, which in a new version give an unexpectedly bright flavour. Carrots give sweetness and tenderness, pickles – expressive sourness, and onions and garlic – piquancy.
Recipe
Ingredients:
- Onions 2 pcs.
- Carrots 1 pc.
- Pickled or pickled cucumbers 4 pcs.
- Garlic 2 cloves
- Mayonnaise 1-2 tbsp
- Salt
- Pepper
Cooking
- Peel the onion and cut into small cubes. Grate the carrots on a medium or fine grater.
- Fry the onion in a little oil until transparent, then add the carrots. Stew the vegetables over medium heat for 5-7 minutes until soft. Allow the mixture to cool.
- Grate the pickles and squeeze out the excess liquid well. Otherwise, the snack may turn out too watery.
- Chop the garlic cloves or press them through a press.
- In a deep bowl, combine the cooled roasted vegetables, cucumbers and garlic. Add a spoonful of mayonnaise, salt and pepper to taste. Mix well until homogeneous.
Tips:
- For a less calorific version, replace the mayonnaise with Greek yoghurt or low-fat sour cream.
- For a vegan version, use vegetable mayonnaise or mashed avocado.
- For those who like it spicy, you can add a pinch of chilli pepper or a dash of hot sauce.
- The spread is perfect on toast, black bread, pita bread or even as a topping for pancakes.
- Garnish with fresh herbs or sesame seeds if desired.
