Chocolate encased pistachio-raspberry-cheese-cheese curd Easter
Ingredients:
For the base:
- white chocolate or chocolate coating – 200 g.
For the raspberry filling:
- gelatine – 5 g;
- milk – 50 ml;
- fresh or defrosted raspberries – 175 g;
- sugar – 75 g;
- cottage cheese – 150 g;
- cream cheese – 150 g;
- butter – 25 g.
For the pistachio filling:
- gelatine – 5 g;
- milk – 50 ml;
- cottage cheese – 150 g;
- cream cheese – 150 g;
- butter – 25 g;
- icing sugar – 25-75 g;
- pistachio paste – 100 g.
Preparation:
- First we prepare the base. Melt the chocolate or chocolate glaze in the microwave or on a water bath. Pour it into a silicone mould and spread it evenly as shown in the video. Place in the fridge until set, about an hour.
- For the raspberry filling, bring the raspberries and sugar to the boil and cook for a few minutes. Strain through a sieve and allow to cool completely.
- Pour the gelatine over the milk and leave for 15 minutes.
- Beat the curd, cream cheese, soft butter and raspberry filling thoroughly with a blender. Add the melted gelatine and beat thoroughly again with a blender. ⠀ ⠀
- Next, make the pistachio filling. Pour the gelatine over the milk and leave for 15 minutes. Beat the curd, cream cheese, soft butter, baking powder and pistachio paste thoroughly with a blender. Add the melted gelatine and beat thoroughly again with a blender. ⠀
- The last step is assembly. In a mould with a chocolate base, place the fillings in layers, each time placing in the fridge for 15 minutes. If one of the layers, waiting at room temperature, will harden – you can just warm it up a little in the microwave or on the cooker. Send the finished Easter to the fridge for 7-8 hours.
- Carefully, slowly and very carefully remove the silicone mould from the finished Easter. Decorate as desired. Easter is ready!
