Forgotten legendary cake “Hedgehogs”: cooking with boiled yolks

The popular pastry “Hedgehogs” or “Kiev chestnuts” can be repeated at home

In Soviet times, a popular pastry in Ukraine was “Hedgehogs”, which for many people is a taste of childhood. This treat was also called “Golden Niva” or “Kiev Chestnuts”. Over time, it was forgotten about, and now you can’t buy it in any shop. However, you can make this legendary dessert yourself – it is not difficult at all.

Kiev Chestnuts or Hedgehogs biscuits are made from a similar sand dough, but instead of raw eggs, boiled yolks are used. Sultanas, prunes, nuts or cherries are wrapped inside. But even without filling the cake is very tasty. Finished products are covered with glaze and wafer crumbs.

How to prepare “Hedgehogs” biscuits – step-by-step recipe

Ingredients

For the dough:

  • butter – 220 g;
  • sugar – 100 g;
  • boiled egg yolks – 5 pcs;
  • sour cream – 4 table litres;
  • flour – 250 g;
  • vanillin – a pinch;
  • baking soda – a pinch.

For the glaze:

  • butter – 60 g;
  • sugar – 250 g;
  • milk – 100 ml;
  • cocoa – 4 tablespoons.

optional:

  • waffles – 200 g;
  • filling to taste (nuts, dried fruit, cherries).

Preparation:

  1. Separate the hard-boiled eggs into whites and yolks, mash the latter with a fork. Leave the butter to soften and mix with the sugar until smooth. Mix with the yolk mixture.
  2. Add the sour cream and vanilla sugar. Sift the flour through a sieve, mix with the baking soda and combine with the rest of the ingredients. The dough will be homogeneous and not sticky.
  3. Form the dough into equal balls and flatten. Place the filling inside each one and roll up again. Bake the biscuits on a parchment-lined baking tray for 12 minutes at 180°.
  4. To make the icing, melt the butter and mix with the milk, sugar and cocoa powder. Bring to the boil and remove from the heat. Grate the wafers or chop with a blender. Dip the hedgehogs in the icing and roll in the wafers.
