Want to make the perfect cholodets for Easter, but without gelatin? This recipe will give you a transparent, tasty and real cholodets, which will become a decoration on the festive table.
How to make the perfect cholodets for Easter without gelatin, tells RBC-Ukraine.
Recipe
Ingredients:
- 1kg of pork shanks (or pork with bone)
- 500 g pork meat (flesh) – for flavour and texture
- 1 chicken breast (for lightness and flavour)
- 1 large onion
- 3-4 garlic cloves
- 3 bay leaves
- 10-15 peas of black pepper
- Salt to taste
- 2 litres of water
- Carrots (optional)
- Parsley for decoration
Preparation:
- Preparing the meat: Wash the pigs’ feet, meat and chicken breast thoroughly. Then put them in a large saucepan and pour cold water over them. Bring to the boil and skim off the foam. This is an important step to make the coldcracker transparent.
- Boil the broth: Add the bay leaf, black pepper and whole peeled onion to the pot. Cook over low heat for 4-5 hours, skimming the foam occasionally. The longer the broth is cooked, the clearer it will be.
- Strain: When the broth is ready, remove the meat, onion and bay leaf. Strain the broth through a fine sieve to ensure that there are no small particles and that it is completely clear.
- Adding vegetables: If desired, you can add carrots to the broth, which should be boiled separately beforehand, chopped and put into the cholodets for colour and flavour.
- Final preparation: Cut the meat into small pieces, add to the broth along with the garlic, salt to taste. Allow the stock to come to the boil again.
- Forming the coldcock: Pour the broth into the moulds, on the bottom of which you can put carrot slices or herbs for beauty. Allow to cool to room temperature and then place in the fridge for 6-8 hours to harden.
Recommendations:
If the broth is too runny, you can add some more bones to add a more gelatin-like texture.
Thin slices of cooked carrots or parsley can be added for decoration and a more aesthetic look.
