However, celebrity chef Christopher Kimball, founder of America’s Test Kitchen, claims that most of us have been doing it all wrong. In his TikTok account, he shared that the key to success lies not in cooking time, but in proper chilling.
“Everyone makes the mistake of peeling eggs,” Kimball says. “During my time in Paris, I realised that it’s not about how you boil an egg, but how you refrigerate it.”
It was then, he says, that he discovered a technique that dramatically changed his approach to hard-boiled eggs. The essence of the method is to boil the egg for exactly eight minutes and 40 seconds, and then immediately drop it into an ice bath for three minutes. The sharp temperature difference allows the yolk to remain soft and moist, and the white to separate from the shell without difficulty.
“This secret is simple: an ice bath for three minutes. It causes the egg from the inside to shrink a little bit and separate from the shell, which allows it to come off easily,” explained the chef.
The cooking process looks like this:
- Boil the water.
- Carefully place the eggs in the boiling water.
- Cover for 8 minutes and 40 seconds.
- Once cooked, immediately place eggs in a large bowl with ice.
- Allow them to stand for three minutes.
- Take out and enjoy the shells fluffing up in a second.
