There is always room for experimentation in the world of cookery, especially when it is simple, spectacular and delicious. One such gastronomic discovery was sushi muffins – a modern variation on the theme of favourite Japanese dishes, combining the aesthetics of sushi with the convenient format of muffins.

Ingredients:
For the rice
- Sushi rice 150 g
- Water 220 ml
- Rice or apple cider vinegar 2 tbsp.
- Sugar 1 tsp
- Salt ½ tsp
For the stuffing
- Crab sticks 250 g
- Hard cottage cheese 80 g
- Red caviar (you can use imitation caviar) 100 g
- Mayonnaise 2 tbsp
- Soy sauce 1 tbsp
- Cream sauce 1-2 tbsp
Optional
- Nori sheets 4 pcs.
- Unagi or Teriyaki sauce
Preparation
- Rinse the rice thoroughly several times until the water is clear.
- Fill with water in a ratio of 1:1.5. Bring to the boil, reduce the heat to low, cover with a lid and simmer for 15 minutes without opening the lid. Then remove from the heat and leave to infuse for another 15 minutes under the lid.
- Mix together the vinegar, sugar and salt, heat a little until dissolved. Pour the dressing into the warm rice, stir gently and leave to cool.
- Chop the crab sticks finely or grate them on a large grater. Grate the cheese as well. Add the caviar, mayonnaise, soy sauce and your favourite cream sauce. Mix thoroughly.
- Cut the nori leaves into four squares. Place each square in a muffin mould (preferably silicone or oiled) to make baskets.
- Place some rice on the bottom, pressing down firmly with a spoon. Top with a generous portion of the filling.
- Preheat the oven to 190°C. Bake the muffins for 10 minutes. They should be lightly browned and the cheese slightly melted.
- Before serving, drizzle Unagi or Teriyaki sauce over each muffin. Garnish with green onions, sesame seeds or extra caviar if desired.
Tips:
- Sushi rice needs to be sticky, so use a special variety of short-grain rice.
- It is better to take high-quality nori – they do not tear and keep their shape during baking.
