In the world of sweets, there are those that are always admired – not only because of their flavour, but also because of their lightness, delicate texture and aesthetic appearance. One such exquisite dessert is tiramisu, an Italian classic that has received many new interpretations over the years.
One of the most interesting variations is the Rafaello tiramisu, inspired by the famous coconut and almond candy. This dessert contains no raw eggs, is very quick to prepare and requires no baking – perfect for a homemade tea party or a romantic dinner.
The recipe was shared by food blogger Valeria Veligura and it immediately won the hearts of her followers – delicate cream, coconut shavings, candy pieces, fragrant Savoiardi biscuits – all this creates a real symphony of flavour.
Recipe
Ingredients:
- Savoiardi biscuits 100 g (approximately 10-12 pieces)
- Milk (regular or coconut milk) 125 ml
- Mascarpone cheese or cream whey 250 g
- Cream (plain or coconut cream) 250 ml
- Condensed milk (plain or coconut) 100 ml
- Raffaello candy 10 pieces (approx. 100 g)
- Coconut shavings 25 g
Preparation
- In a deep bowl, beat the mascarpone (or cream cheese), chilled cream and condensed milk with a mixer until a thick, airy mass forms. The consistency should be firm but soft.
- Chop the Raffaello candy (you can do this by hand or in a blender) and add to the cream along with the coconut shavings. Mix gently with a spatula until smooth.
- Quickly dip each biscuit into the cold milk, place in the mould in one even layer.
- Spread half the cream on top of the biscuits, smooth it out. Repeat this with the second layer of biscuits and cream. The top layer should be completely smooth.
- Cover the mould with food film and place in the fridge for 4-6 hours, or preferably overnight. During this time the dessert will soak in well and the cream will stabilise.
- Just before serving, decorate the dessert with coconut shavings, Raffaello halves, ground almonds or white chocolate.
Tips:
- Instead of Savoiardi biscuits, any light biscuit or shortbread will do, but the original version holds its shape better.
- The finished dessert can be stored in the fridge for up to 3 days, but it tastes best the day after cooking.
